I love making fun recipes out of chickpea beans! Here is a chickpea salad sandwich recipe I made that I am obsessed with!
Makes 2-3 sandwiches
1 can chickpeas (rinsed and smashed)
¼ cup finely chopped celery
¼ cup diced red onion
¼ cup dill pickle
¼ cup vegan mayo, tahini, or hummus
1 tablespoon lemon juice
½ teaspoon sea salt
¼ teaspoon garlic powder
Pepper to taste
Whole Wheat Bread
Toppings: avocado, lettuce, tomatoes, onions
Rinse chickpeas under cold water in a strainer until bubbles disappear, then mash in a bowl using a fork. Mash chickpeas until desired texture. Add other ingredients to mixture and stir until everything is evenly mixed in with smashed chickpeas. Toast bread and put desired amount of chickpea salad on bread, then add toppings.
